Zercher Brand Geraucherte has officially opened their doors at 3762 RR 1623, but the services they’re offering are not exactly new to Blanco. G.W. “Popo” and Paula “Emmie” Zercher had owned a profitable dairy farm in San Antonio before they moved to Blanco in 1963. After arriving, they started another dairy farm and offered meat processing services to their family and friends right out of their home. G.W. and Paula believed in the old tradition of smoking meats, and great-grandson Clayton has continued the tradition out of his home. Now he will be able to, once again, offer services to the general public.
Clayton will be using the same German recipes passed down the Zercher family line, and he’ll also be adding some modern favorites to the options. A short list of offerings includes: German links, Garlic links, Hot links, (and you can add cheese and jalapenos to any of those), pan sausage, buck sticks and steak jerky, and cutting and grinding in burger or chili style. Zercher Brand is currently set up to process deer and wild game, including fowl, but no domestic animals at this time. More Zercher family products are also available to purchase, such as jams and jellies. They’ll also pick up your hunting prize for processing; rates will be based on distance.
Clayton had long wanted to make Zercher Brand processing available to the public, but wasn’t able to find someone who could work the shop full-time. Then Jason Bailey came into the Zercher family. Jason had been trucking for the last few years, and was ready for a change of pace. Jason and his wife live just 100 yards from the retrofitted dairy farm that now holds Zercher Brand Geraucherte. Beside the building, a huge smoker has been built for the sausages and jerky.
Zercher’s motto is “You get back what you drop off.” You may think it is a standard rule for processing shops, but Clayton tells us that’s not always the case. Every place will give you what you pay for, but it may not be the meat you brought in, or at least not all of it. Zercher prides themselves on their efforts of keeping your meat separate from any others. Every order is kept in its own labeled container, every step of the way. It’s just another facet in the quality that Zercher will strive to offer.
