Sausage-Cheese Balls

2 c. Bisquick

1 lb. of breakfast sausage

1 lb. cheddar cheese, grated

Preheat oven to 350’.

Combine all ingredients and shape into small balls. Place on cookie sheet. Bake at 350’ for 12 to 15 minutes, until golden brown.

    **A very quick and inexpensive idea for breakfast. Prepare in the evening, refrigerate, and pop in the oven the next morning for breakfast.

Chicken Enchilada Pie

1 (3 lb.) chicken

1 can cream mushroom soup

1 (4 oz.) can chopped green chilies

4 tsp. minced onion

1/8 tsp. garlic powder

¼ tsp pepper

¼ tsp. Tabasco Sauce

1 c. chicken broth

4 c. corn chips

8 oz. sharp cheddar cheese, grated

Cook and bone chicken. Reserve 1 cup of chicken broth. Combine soup, green chilies, spices, Tabasco sauce and chicken broth. Blend well. Preheat oven to 350’. Cover the bottom of a 2 ½ or 3 quart casserole dish with 2 cups corn chips. Spread half of the chicken over this layer, then half of the sauce, then half of the cheese. Repeat, ending with cheese. Bake at 350’ for 25 to 30 minutes.

Posole

1 (2-3 lb) pork roast

2-3 cans hominy

1 chopped onion

Red chili to taste

Salt to taste

Cumin to taste

Garlic to taste

2-3 cans chopped green chilies

Put roast in large pot and cover with water. Cook until well done. Debone roast and remove fat from broth. Return to pot and add remaining ingredients. Cook over medium heat for 1-2 hours. This could also be cooked in a crock pot.

This soup is served in New Mexico by the natives to all guests that come to their homes. It is believed to bring good luck. Good luck and money saving recipe – can’t be beat.

Serve up: Hot Dogs, Theatre Style Popcorn, Homemade Cherry Limeade (Use a limeade mix and add cherries)

Very inexpensive and more fun than going to the theatre!
